Most people think of Sydney when they picture New South Wales—and fair enough, it’s an icon for a reason. But there’s so much more to explore once you start looking beyond the Harbour Bridge and Opera House.

If you're trying to figure out where to start, these eight experiences capture the essence of NSW. From epic road trips and mountain adventures to coastal gems and sky-high views, each one gives you a glimpse of what makes this state so special.

  1. A Hot Air Balloon Ride

A sunrise hot air balloon ride is one of those experiences that stays with you forever. Floating above the countryside in Camden Valley or Hunter Valley feels like something straight out of a storybook. We booked with Balloon Aloft, the longest-running hot air balloon company in Australia, and the whole experience, from setting up the balloon to packing it down, was so memorable.

For the best chance of flying (since weather cancellations can happen), we recommend booking between August and September. And if you're curious about the Camden flight in particular, check out our full review here with photos from the tour.

  1. Scenic World

Located in Katoomba, Scenic World is the closest thing to an adventure park in the Blue Mountains, and it’s world-record-worthy. You’ll ride the world’s steepest railway, glide between cliffs on the Scenic Skyway, and float above the forest canopy on the Cableway. There’s also a lovely rainforest Scenic Walkway loop at the base. It’s a great way to get classic Blue Mountains views with a fun twist. We’d give yourself around 2–3 hours here to enjoy each ride without any rush. For you need to know about visiting Scenic World, including what to see and do, insider tips, and how to make the most of your time, read our guide here.

  1. Broken Bay Pearl Farm

NSW’s only pearl farm is tucked away on the Hawkesbury River at Mooney Mooney, and it’s one of the more unique things you can do. The Shellar Door sits right on the water with views of Spectacle Island, and you can join a guided tour, meet the farming team, and learn about Australia's pearl and oyster industry.

There’s even a chance to enjoy freshly shucked local oysters after the tour. A perfect slow morning if you’re staying on the Central Coast.

  1. Whale Watching in Sydney

Read our Whale Watching in Sydney Guide here.

Did you know that humpback whales swim right past Circular Quay between May and November during their annual migration from Antarctica to the Coral Sea? They travel up the east coast to give birth, and Sydney is right on their path!

To see baby calves, aim for mid-August to September. For more whale activity like breaches and tail slaps, late June to mid July is usually the peak.

We booked a $65 cruise and saw humpbacks up close, breaching just metres from the boat. It was a surreal moment and one of our favourite things we did that season.

  1. Glenworth Valley Glamping

Read our Glenworth Valley Glamping Guide!

Just over an hour from Sydney, Glenworth Valley provides luxury glamping and outdoor adventures in the most peaceful bushland setting. It’s Australia’s largest horse-riding centre, where you can also go quad biking, kayaking, or simply chill by the fire with a glass of wine under the stars.

We booked with Simple Pleasures for ~$225 per night and chose their Glamping Village package for glamping.

  1. Stargazing in Warrumbungle National Park

Located in the Orana region of inland New South Wales, Warrumbungle National Park is a fascinating place to visit.

During the day, you can hike through the rugged volcanic mountains, spotting wildlife and getting insane photos of the crazy rock formations.

But the Warrambungles come alive at night! As Australia’s first Dark Sky Park, Warrumbungle National Park has minimal light pollution and creates the perfect place for stargazing.

Visitors can set up telescopes and cameras at designated viewing areas, or visit the nearby Siding Spring Observatory which is home to Australia’s largest optical telescope.

You’ll get the most incredible views of the starry night sky in the Warrumbungles!

  1. Sydney Harbour BridgeClimb

Climbing the Sydney Harbour Bridge is one of the high-ticket experiences that’s worth the money in Sydney. Standing 134 metres above sea level with views over the Opera House and the city skyline is something else!

You can choose from day, twilight, or night climbs, but we highly recommend the twilight session when the city starts to light up. The climb takes about 3 hours, and you'll be safely harnessed the entire way with a guide walking you through Sydney’s history and landmarks. Prices start at $354 for adults and $239 for kids.

  1. The Grand Pacific Drive

If you love a good road trip, the Grand Pacific Drive is one of the most scenic routes in Australia. Starting from the Royal National Park, it takes you over the stunning Sea Cliff Bridge and down through beach towns like Wollongong, Kiama, and Shellharbour, eventually leading into the Shoalhaven region.

There are beaches, waterfalls, ocean pools, food stops, and lookout points all along the way. You can loop back to Sydney via the Southern Highlands or keep heading south toward the Sapphire Coast. It’s a drive where the journey really is the destination!
