Step back in time at Fukuju Shoyu, a traditional soy sauce brewery operating since 1826. As you wander through the historic premises, the rich, sweet aroma of brewing soy sauce fills the air, guiding you to the small shop tucked away in the back. Here, you can purchase their naturally fermented soy sauces and misos, crafted using methods passed down through generations. The factory is currently run by the 6th generation descendant of the original founders, and still uses the ancient techniques and tools that more modern soy sauce factories did away with long ago. The brewery's towering chimney is a local landmark, and the entire place has a wonderfully nostalgic feel that makes you feel like you've discovered a true local secret.
