If you're going for sunrise you need to leave around 1-2am to ensure you're at the top. The best views are just post sunrise of the surrounding area.
Be very aware of holidays and religious ceremonies. If it is a full moon or festival day you will most likely not manage to reach the summit due to the number of people trying to go. You can be stood in a queue for hours as there is limited space at the peak.
Be wary of people offering blessings or bracelets at the base of Adam's Peak, they will often ask for a surprisingly large amount of money for these. It is best to avoid them entirely. If you want a blessing or to donate then you can do so at the summit at the official places.
