"Our restaurant was founded by the fifth generation of a family that began as a meat wholesaler in 1962 and has walked alongside “wagyu” ever since. To me, wagyu wasn’t a “special treat” for rare occasions. It was a familiar taste—something naturally present in my daily life since childhood. But one day in my 30s, I visited the United States and was shocked. The “WAGYU” that had become popular overseas was completely different from the wagyu I knew. “Is this really what ‘wagyu’ should be as it spreads around the world?” That sense of discomfort deeply shook something within me.
