While Bannai is a well-known nationwide ramen chain, the Bannai group holds a unique status. In a competitive landscape of countless ramen chains, Bannai stands apart because of its chashu (braised pork), which is in a league of its own. It is so remarkably tender and rich in flavor that locals frequently visit just to purchase entire slabs of pork to take home! I've posted a photo of the slab sold that day.
The ramen features a Kitakata-style soy-sauce-based broth that is light, delicate, and refined—a refreshing departure from the heavier ramen styles often found elsewhere. The star, however, is undoubtedly the chashu. It is simmered to such perfection that it melts instantly in your mouth.

The Original "Wafu Hiyashi Ramen" If you visit during the summer, there is one dish you cannot miss: the Wafu Hiyashi Ramen. This is an original creation exclusive to this shop and is, without exaggeration, the most masterfully balanced cold ramen in Japan. The chilled, umami-rich soup is served with ice cubes floating in the bowl!
