La Viña, a pintxo bar in San Sebastián, Spain, is no ordinary establishment. Started as a family venture in 1959 by the Rivera brothers, their wives, and eventually their son Santi, La Viña is home to the renowned burnt Basque cheesecake. Though Santi retrofitted his father's humble bar to make it his own in the late 1980s, it was only with experimentation and creativity that he developed the globally beloved sweets. As surprising and delightful as it has been for the world to find out, La Viña had long known they had something special. Thanks to Santi's adjustments and warm atmosphere, what started as a small taste of something savory has grown into an international favorite.
