Tucked inside the Tozeur Medina, Essiguifa is a local restaurant that dishes up hearty Tunisian classics with a twist. The star here is gargoulette, camel meat slow-cooked in a sealed clay pot until it’s tender and packed with flavor. Another must-try is their version of mloukhia, a popular dish in the South made from a rich green stew that’s unlike anything you’ll find elsewhere in Tunisia.

Meals come with plenty of bread, dips, and sauces on the side, and the restaurant has a lovely outdoor setting right in the heart of the Medina. It’s simple but atmospheric, the kind of place where you can settle in, enjoy the food, and soak up the feel of old Tozeur.
