Baldío in Mexico City is the first zero waste restaurant in town, inspired by London's Silo. Owned by the Usobiaga brothers and with chef Laura Cabrera Hernández at the helm, this spot focuses on local, organic ingredients and creative dishes. They do an incredible tasting menu that is worth experiencing and they are able to accommodate vegans. Reservations here are highly recommended.

Note: They do have an open kitchen concept. If seeing meat being prepared/cooked is bothersome, I recommend not sitting at the kitchen counter. They have plenty of tables throughout the restaurant to enjoy your meal at.
