One of the most unexpectedly delicious things we ate in Morocco was a preserved meat called khlii. It is a traditional Moroccan cured and preserved meat that has been cooked in fat and spices and then stored, sometimes for months or even years. It sounds unusual. It is extraordinary.

The texture is tender and almost melt in the mouth, somewhere between a very soft jerky and a slow cooked meat. The flavour is rich, deeply spiced and completely unlike anything you will find at home.

The most common way to eat it is in a breakfast omelette, eggs cooked with khlii folded through, served with warm bread and mint tea on the side. We ordered it without really knowing what it was and it became one of the food highlights of the entire trip.

Kristina's tip: Order the khlii omelette for breakfast at your riad or at a local cafe in the medina. It is cheap, filling and genuinely one of those dishes you will talk about when you get home. If you see it on a menu, order it without hesitation.
