You do need to consider that museums are busier on weekends.
You can also adjust this itinerary for a non-weekend trip, just skip out on the Balon del Sabato market (which only operates on Saturdays) and see the notes I've added regarding the days some museums are closed.
Friday: Palatine Gate, Duomo (Cattedrale di San Giovanni Battista), Musei Reali (the Royal Palace) - closed on Wednesdays, Egyptian Museum - closes early on Mondays, free time in the historic center.
Saturday option 1: Lavazza Museum - closed on Mondays and Tuesdays, Balon del Sabato, Porta Palazzo, free time in the historic center with optional museum visits**.
Saturday option 2: National Automobile Museum - closes early on Mondays, Eataly Torino Lingotto, Valentino Park, optional - San Salvario neighborhood.
Sunday: Villa della Regina - closed on Mondays, Church of Gran Madre di Dio, Piazza Vittorio Veneto, National Museum of Cinema (in the Mole Antonelliana) - closed on Tuesdays, more free time in the historic center.
**Optional museum visits in the historic center: Palazzo Madama - closed on Tuesdays, Gallerie d'Italia - closed on Mondays, Museo Nazionale del Risorgimento - closed on Mondays.
