Spaghetti all'Assassina - Bari's infamous, uniquely-cooked (not in boiling water), spicy charred/burnt pasta dish - is a must-try. But it's also important to choose the right places to try it because it can be too spicy or too burnt, which isn't enjoyable to eat.
Urban is considered one of the go-to places for Spaghetti all'Assassina, and I personally think it's worth the hype. It has a super cool modern atmosphere with young, friendly staff, and a menu that offers not only the classic version of this dish but also out-of-the-box options of Spaghetti all'Assassina (I LOVED the one with the stracciatella, which is still quite classic and balances the spiciness). You can also order their unique starters, local beers, and wines. I got seated without a reservation, but it fills up pretty quickly, so you might want to reserve your spot.
