Bolo do Caco

Bolo do Caco is a traditional Madeiran bread, known for its soft texture and unique preparation method. Made from wheat flour, sweet potatoes, yeast, and a pinch of salt, this bread is shaped into round discs.

Over time, this humble bread became a signature dish of Madeira, celebrated for its versatility and unique taste. Traditionally, Bolo do Caco is sliced in half and spread generously with garlic butter, often infused with fresh parsley.
Where to try: Almost anywhere on the island — from restaurants to street food stalls.

Espetada

Madeira’s espetada is a traditional skewered beef dish seasoned simply with coarse salt, bay leaves, and garlic, roasted over an open fire. This rustic meal dates back to times when meat was scarce and enjoyed only during special celebrations. Originally, the skewers were made from laurel branches, which impart a subtle, aromatic flavour unique to Madeiran espetada.

Today, many restaurants use iron or aluminium skewers, but laurel skewers remain popular among those who prefer a traditional taste. Espetada is traditionally served with fried cornmeal cubes (milho frito), bolo do caco (garlic flatbread), and garlic butter, but it can also be accompanied by other side dishes such as salad or potatoes.

Lapas

A true Madeiran delicacy, Lapas Grelhadas (grilled limpets) are a must-try for seafood lovers visiting the island. These small, meaty shellfish are harvested from the rocky coastline and grilled in their shells with butter, garlic, and a squeeze of fresh lemon, enhancing their naturally salty, ocean-fresh flavour.

Served sizzling hot on a cast-iron plate, lapas are best enjoyed with a side of bolo do caco, Madeira’s famous garlic butter bread, which soaks up the flavourful juices perfectly.
Insider Tip: Always ask if the lapas are fresh, as frozen ones lack the same flavour. They’re seasonal and unavailable in winter due to harvesting restrictions.
