You’re in for a very local food experience at Mercado 20 de Noviembre in Oaxaca’s center, where the main draw is the row of comedores serving tlayudas, mole, grilled tasajo and cecina, and mezcal tastings. Go at lunchtime when the stalls are busiest, bring cash and small bills because cards are rare, and order at the counter then find a seat. Look for busy stalls with lots of locals for the safest, freshest food, keep an eye on your belongings in crowds, and skip raw vegetables if your stomach is sensitive. If you’re adventurous, try chapulines or a mezcal sampler, but stick to vendors with high turnover for best hygiene.
