La Chata de Guadalajara is a no-frills, popular Jaliscan spot where you should come for torta ahogada, pozole or carne en su jugo; those are the dishes that show why locals go. Go outside peak meal times if you want a table, or be prepared to wait and order to-go if you're on a schedule. Bring some small bills since cash makes things faster, though bigger locations usually accept cards, and tip about 10 to 15 percent. Ask for salsa on the side if you are heat-sensitive, and have a little Spanish ready because staff often speak limited English.
