If you're looking for a hike near Moab that isn't inside a national park, Grandstaff Canyon is one of my favorites. The trail follows a creek through towering red rock canyon walls, includes plenty of water crossings, and ends beneath the impressive Morning Glory Natural Bridge. It's especially beautiful in the late afternoon when the canyon provides plenty of shade.
