Operating out of a humble shack on the edge of the busy market streets, Wakaba has been a Tsukiji institution for nearly 70 years. The shop is famous for its "Chuka Soba," featuring remarkably thin, wavy noodles that are designed to cook in seconds, allowing busy market workers to slurp down a hot meal in minutes. The broth is a light, clean soy sauce base that highlights the simple toppings of tender chashu pork, bamboo shoots (menma), and fresh scallions. There are no actual seats—diners balance their steaming bowls on narrow standing counters or makeshift tables on the sidewalk, fully immersing themselves in the gritty, high-energy atmosphere of Japan’s most famous food district.
