Ahmet Usta, the master baker at Kuveloğlu Han's historic pide restaurant in Istanbul Eminönü, has been making traditional Ottoman style pides with charcoal for over a quarter of a century. He learned the art of baking from his father and the ways of the oven from his grandfather. The secret to Ahmet's pide lies in the skillful control of the temperature of the charcoal fire in the old Ottoman oven. Equally devoted to both his craft and his customers, Ahmet has trained his son and nephews as apprentices, and even provides free meals to those not able to pay.
