For me, Lindenhof (one of my videos here) has one of the best views in Zurich, without a doubt. It is right in the Old Town, but once you get to the top, everything feels calmer. You can see the Limmat, the rooftops, the churches and the city from above in such a beautiful way. It is a simple stop, but a must if you want that classic Zurich view.
