After being awarded with a coveted one star from the prestigious Michelin guide, it has attracted diners from all around the world to enjoy its amazing shellfish broth ramen. With an incredibly delicate soup simmered on a low heat to carefully draw out the flavor without getting any bitterness, their signature Shoyu Ramen features a blend of tare made from four different soy sauces and condensed umami from various seafood and chicken. The bowl is topped off with pork char siu, menma bamboo shoots, spring onions, green onions, and specialty oils that bring the flavor profile to the next level.
