Kaikōura is a compact coastal town built around whale watching and fresh crayfish, so plan your trip around those two things: book a whale-watch (boat or scenic flight) and a seafood meal ahead, especially in summer and holiday weekends. Tours are weather dependent, so bring warm, waterproof layers and motion-sickness medication if you choose the boat; the scenic flight is easier on queasy stomachs and gives great aerial views but costs more and can still be affected by weather.
