If you've seen a photo of Lanzarote with turquoise water and golden sand in a volcanic cove — it was probably Papagayo. The protected area has several small beaches, each with its own vibe. Arrive before 10am or after 4pm to avoid the crowds. Bring snacks and your snorkelling gear. No real infrastructure to speak of — and that's exactly the point.
