JB’s TOKYO is a "bakery and burger" hybrid that operates on a radical premise: everything must be made in-house. While most gourmet burger shops source their bread, JB’s bakes its own buns and signature square shokupan (milk bread) daily using Hokkaido flour and butter. Their goal is to reclaim the concept of "fast food" by stripping away artificial seasonings and mass-produced components. The result is a high-quality smash burger—flat, crispy-edged patties—served at a price point and speed closer to a chain, but with the artisan soul of a boutique bakery.
