Unlike typical heavy pork ramens, the broth here is a refined, salt-based (shio) tonkotsu that remains clear and elegant while packing a deep, savory punch. Each bowl features distinctive, extra-thick curly noodles that provide a satisfying chew, topped with tender slices of chashu and crisp scallions.
